Chablis Premier Cru Les Vaucopins, Albert Bichot
"Les Vaucopins" premier cru asserts itself firstly by its attractive pale yellow colour with soft honeysuckle reflections. It
has an expressive and rather powerful mineral-dominating nose. Milk caramel notes combine with an elegantly fine and
oaky aroma. On tasting, an impression of sweetness is detectable; crystallised fruit, apricot, and quince. This beautifully
full wine gives way to an ample and finely acidic finale.
The varied and sustained aromatic pallet of this great wine allows a double vocation. As an aperitif, it can be served
accompanied with finely-sliced Parma cured ham or a "Pata Negra" Spanish Serrano ham.
For a convivial meal, serve with the flavours of a sea bass carpaccio seasoned with olive oil and artichoke mousse, or
with a snail pastry with garlic cream.
