The Coeur De Lion Estate is located in the heart of the Pays d'Auge region in France. In this 17th Century farm that the finest ciders, pommeau, and calvados are produced. Passed down through generations, the estate blends traditional distillation methods with more modern techniques. To make their Calvados, Coeur de Lion used 30 different apple varieties. To obtain a juice with the correct amount of sugar, tannins, and acidity, the correct blend of sweet, bitter-sweet, bitter, and acidic apples must be used. The estate's orchard is planted only with traditional low-yield varieties, carefully selected to ensure a proper balance between the four types.
This Calvados has been aged for more than 15 years in small oak casks. A complex, balanced nose leads to flavors of oak and spice accented with mellow fruit notes. The lingering finish exhibits notes of dried orange, vanilla, and caramel. Allow it to breathe in the glass before tasting.
