Vineyards : In northern Burgundy, not far from Auxerre, the Chablis appellation covers an approximately fifteen-kilometre radius around the village of the same name. It was the monks of the Cistercian abbey of Pontigny who began growing vines in the region. Terroir : Chablis is located on the south-eastern extremity of the Paris Basin. The soil is composed of clay-limestone marls that are only found here. They date back to the Kimmeridgian geological stage of the Upper Jurassic Epoch. The grapes used to craft this Chablis at the Domaine Long-Dépaquit estate come from a mosaic of terroirs which lends remarkable complexity to the wine. Vinification : When the grapes arrive at the winery, located at the heart of the village of Chablis, they are pressed very gently. Cold static settling removes any deposits or impurities. To preserve all of this easy-drinking, pleasing wine's minerality, temperatures are monitored and maintained at approximately 18°C. Ageing : This wine was aged on fermentation lees in stainless steel tanks for 6 to 8 months. The lees nourish the wine and give it lovely roundness on the palate while preserving the flavours and aromas typical of the varietal and terroir. |
