Verdicchio dei Castelli di Jesi Doc Classico
FIRST VINTAGE BOTTLED 2005.
PRODUCTION AREA Vineyards in the original and most ancient area of Castelli di Jesi.
VARIETY Verdicchio monovarietal.
SOIL TYPE Medium-texture tending to sandy.
HARVEST Handpicked, early in the morning or late in the afternoon, grapes are placed in small trays and kept in cold cells before being taken to the winery.
FERMENTATION Verdicchio is made from grapes which are handpicked when they are slightly over ripe. After soft pressing, the must is channelled into cooling containers and brought to 5°C for static decanting. Then it is transferred into steel tanks, and is vinified at controlled temperature to preserve its aromas. The wine matures in steel containers, at controller temperature, until sterile bottling.
