This precious condiment is produced by simmering grapes sourced from the winery’s vineyards in Sant’Ambrogio di Valpolicella, fruit otherwise intended for production of the estate’s Amarone.
“Aceto Balsamico di Modena IGP” is added to the cooked must and then it’s aged in small oak casks.
